Salmon croquettes

I have been eating salmon croquettes since I was a kid. Salmon croquettes are primarily a southern food and is very easy to prepare and serve

All you need:

one can of pink or red salmon — one large onion, finely chopped in cubes — two small eggs, beaten — 1/2 cup yellow flour or cornmeal — 1/2 bell pepper, without seeds — salt and freshly ground pepper to taste — two tablespoons butter or extra virgin olive oil


1. Drain excess juice from salmon 2. Pour salmon into a bowl, use a fork break salmon apart into small chunks 3. Add onions, beaten eggs, cornmeal or flour, salt and pepper to taste, mix thoroughly 4. Shape the mixture evenly into four patties 5. Heat the butter or oil over medium heat in a medium pan 6. Brown salmon croquette patties on both sides 3-5 minutes on each side

Serve hot to liking
