Breakfast potatoesThese breakfast potatoes are so easy and so good, let’s get started .. 4 medium potatoes, cubed – 3 tablespoons butter or vegetable oil – 1/2 cup onion/bell pepper – salt and pepper to taste. Prep: Rinse potato cubes with cold water, drain well. Melt butter or oil in a large skillet over medium heat. Place potatoes in the skillet, coat with the butter or oil. Throw in the onion/bell pepper. Season with salt and pepper. Covered, cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until nicely golden brown and crispy ..enjoy
