asparagus saladIngredients: 1 cup asparagus tips – 1 cup grape tomatoes; halves – 3 scallions; chopped – 1/4 cup Italian parsley; chopped or torn, stems removed – 1/4 cup olive oil – 1/4 cup white balsamic – 1/2 cup peas – 1 – teaspoon Dijon mustard -1 teaspoon salt – 1/4 – teaspoon pepper – spinach, iceberg lettuce, or butter lettuce – 1/2 cup parmesan cheese for the top .. you can add fish or chicken as well !enjoy
