Easy ingredients: 1 pkg puff pastry – 2 eggs – 1 tbsp water – 1 pkg 8 oz cream cheese, soften – 11/2 cup of spinach, frozen chopped, then thawed ..well drained – 1 finely chopped onion – 2 tbsps fresh parsley, chopped

Preheat oven to 375 degrees F. Mix 1 egg and water and set aside. Mix remaining egg, cheese, spinach, onion and parsley. Unfold pastry on lightly floured surface. Roll each pastry sheet into 3-inch squares. Place 1 tablespoon spinach/cheese mixture in center of each square. Brush edges with egg mixture. Fold all corners over to form a square. Crimp edges to seal. Place on baking sheet. Brush with egg mixture. Bake for about 15-20 minutes or until golden. Serve warm, enjoy

Walnut sugar cookies Easy ingredients: 1 cup butter – 1 cup of sugar – 1 cup of brown sugar (I used dark brown) – 1 tsp vanilla extract – 1 egg – 2 cups of all purpose flour – 1 tsp baking Soda – ½ tsp baking powder – ½ tsp of salt – 1 cup of walnuts, chopped

Prep: Preheat oven to 350 degrees. In a large bowl cream the brown sugar, granulated sugar and butter, then add the egg and vanilla until combined. Mix in baking soda, baking powder, salt and flour. Fold in walnuts. Use a tablespoon full to drop the dough on a non-stick baking sheet (a couple inches apart). Bake for 10 minutes and let cool before serving
